Ingredients
- 1- 3/4 cups flour
- 1/3 cup sugar
- 2- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup fresh or thawed frozen blueberries
- 1/2 cup blackberries
- 1/2 cup white chocolate chips
- 3/4 cup milk
- 1 egg beaten
- 1/3 cup butter, melted
Directions
- Preheat oven to 400 F.
- Lightly spray muffin pan with cooking oil. In a bowl combine flour, sugar, baking powder, salt. Add milk, egg, and melted butter. Mix until dry ingredients become lumpy. Do not over beat. Fold in blueberries, blackberries and white chips. Divide batter evenly among prepared muffin cups. Bake 20 to 25 minutes or until tops spring back when lightly touched. Recipe makes 2 dozen mini muffins.
